Les Wolford has spent his working life in professional kitchens — lead chef and co-owner of The Red Pony Cafe, executive chef for several country clubs, at the carving station at Atterdag Village of Solvang, and at the door of Kilpatrick’s Tavern.

For years he also ran his own catering business and seasoning store, The Wandering Chef.

In 2020, over nine months, he sat down and typed out his own repertoire, recipe by recipe. What’s on this site is that notebook.
