fish and vegi batter

  • 2½ cup ap flour
  • 1 tsp baking powder
  • ½ tsp cayenne pepper
  • salt
  • 1¼ cup vodka ice cold
  • 1½ cup beer lager style
  • oil 6 cups grapeseed, peanut or canola ( if shallow pan use less)
  1. mix all dry ingredients and put in freezer. when oil is hot 365 degrees mix add vodka slowly while stirring gently. add enough beer to thin batter to pancake batter consistency, it should drip easily from your finger tip don’t overtax it. lumps are fine they will be crispy crust on your fish.
  2. if you like it really crispy use rice flour for half the amount of ap flour
